BBQ Chicken or BBQ Pork Flatbread Pizza

Life is busy! I am all about meals that are easy, affordable, and most importantly, yummy!
We have a smoker and my husband is extremely talented at smoking meat. One of my favorite things that he makes on our smokes is pulled pork. It's so tender and flavorful, but I love it mostly because it makes tons of food for cheap. We can get 4-5 different meals out of one smoked pork shoulder.
One of our favorite things to make with the left over pulled pork is bbq pork flatbread pizzas.
I love the flatbread crusts from Aldi--they are affordable, delicious, and freeze well. Plus, they come in a pack of two.
I first preheat the oven to 425 degrees.
We use our oversized cookie sheet and cover it with aluminum foil in case any cheese falls off. We love this oversized pan and use it all the time for BBQing. Plus, you can make almost an entire batch of cookies using just one pan. This mega-pan in awesome!
Then I spread 1/4 cup of bbq sauce around the crust using a spoon or spatula. We love Countryside BBQ sauce, but this is a midwest only find. We also use Sweet Baby Rays.
Then, spread your pulled pork or cooked chicken on the pizza. I do not shred it before putting it on, but If you have little kids eating slices, you could always shred it.
I sprinkle 1/3 cup of cheddar cheese over the top. I will always vouch for more cheese! You just need to be careful that it doesn't fall off the top as it cooks super quickly on the pan and gets stinky!
